Morelli Straccetti Pasta with Wheat Germ, 250g

Description

Straccetti is an irregular pasta shape that originated in Tuscany. It has a wavy, rectangular shape that resembles strips of torn fabric. Straccetti means ‘little rags’ in Italian. 

Serve straccetti with porcini mushrooms and walnut cream sauce. It’s a rich and comforting dish - perfect for autumn evenings. In Tuscany, straccetti is often paired with white beans and pancetta.

The shape also lends itself to meat sauces that get trapped in its folds. Toss the pasta with slow cooked duck ragu and top with a shower of Parmesan.

Morelli uses an artisan method of reincorporating wheat germ into semolina. It gives their pasta a unique flavour and aroma, similar to toasted wheat.

The pasta is bronze-drawn and dried slowly at low temperatures. This is the secret to the rough surface that helps sauces to cling.

Cooking time: 5-6 minutes.

Store in a cool and dry place, away from cereals.
