This soy sauce is designed to enhance the flavour of delicate fish. Pair it with ginger, spring onions and rice wine to make a flavourful sauce for cod.
You can also use this soy sauce to make a glaze for salmon or scallops. Put soy sauce, grated ginger and sugar in a small pan and simmer until it is reduced by half.
