Golden Star cooking wine is a Chinese cooking rice wine made from wheat and glutinous rice and has a sweet-sharp flavour. It adds a depth and tang to braised dishes such as Chairman Mao’s red-braised pork. It’s also commonly used to flavour the filling in wonton dumplings.
Rice wine has many traditional uses in Chinese cooking, and is also growing in popularity with chefs across the globe. It makes a great alternative to Shaoxing wine in recipes - the sweet-sour tang lifts marinades, stir fries and slow-cooked dishes. Additionally, try adding a splash to your pan, to deglaze after browning pork or chicken.
