Black Fungus - Cloud Ear, 50g

Description

Dried cloud ear mushrooms, also known as black fungus or tree ear fungus, are an edible tree fungus grown in the western Chinese provinces of Hunan, Yunnan and Sichuan. They are gnarly and matt when dehydrated, but once soaked in water for twenty minutes - though longer is better - they expand into shiny, translucent clusters.

Cloud ear mushrooms add rich flavours to soups and stir fries, but are used primarily for their unusual, slippery, crunchy texture. Unlike wood ear mushrooms, cloud ear mushrooms should be added to dishes at the last-minute to retain their shape.
