Lara walnuts are grown in Veneto, in north-eastern Italy. To make this preserve they’re harvested when young, or ‘green’. Young walnuts tend to be quite bitter, with almost tannin-like notes. When candied in syrup the bitterness is balanced out and they take on a tender texture.
