Terre Exotique’s korarima seeds - also known as grains of paradise - release fruity and balsamic aromas, which are fantastic in seafood and rich meat dishes. Originating from the Basketo region in the Ethiopian highlands, the fruits are harvested at maturity, then left to dry in the sun on bamboo racks. The pods are then cut open to extract the seeds.
Intense with aromas of roasted herbs, the korarima seeds are best ground and used just before serving as a finishing flavour. Use to make a sweet potato and peanut soup, or to flavour lobster bisques and rich beef stews.
