Description

Fregola Sarda is a type of small, ball-shaped pasta. It’s a speciality of Sardinia, an island off the Italian coast. Here, it’s typically served with seafood like clams and red mullet.

The pasta dough is toasted to give it a nutty flavour. Fregola has a unique texture - firm on the surface and tender inside. You can add it to soups, salads and Italian stews.

Fregola makes a great base for a Sardinian-inspired fish stew. Flavour it with fish stock, garlic and ripe tomatoes. You can add any fish or seafood you like - mussels, clams and prawns work well. Serve with chilled white wine, ideally outside in the sunshine.

Preparation: Cook for 10 to 15 minutes in boiling water or stock.
