Wild garlic has a milder, grassier flavour than bulb garlic. The leaves and flowers are harvested in early spring. Martin-Pouret uses the wild herb to flavour their creamy French mayonnaise. It has a more subtle taste than standard garlic mayo.
Serve wild garlic mayonnaise as a dip for wedges and roasted vegetables. It can also be used in dressings for seasonal salads. Try adding a spoonful to coleslaw and potato salad. The French sauce adds a gentle garlic flavour and aroma.
This mayonnaise is produced in Orléans, France. It’s made with rapeseed oil and egg yolks from free-range chickens. It gets its subtle tang from Martin-Pouret’s barrel-aged white wine vinegar.
