Lebanese cracked freekeh, also known as frikeh or farik, is nutty and slightly smoky flavoured wholegrain that goes fantastically with chicken, lamb and even pigeon. Freekeh is popular across the Middle East as well as northern and eastern Africa.
Freekeh is roasted or smoked young green durum wheat. It’s an excellent source of fibre and is a good source of protein for vegans and vegetarians, too.
This Lebanese cracked freekeh cooks much faster than whole freekeh. Rinse well under cold water and then steam for 20 minutes. Or add water or stock to the freekeh in a 2:1 ratio, bring to the boil and simmer for around 15 minutes. Serve hot as a side dish like rice, or allow to cool and toss through with chopped cucumbers, tomatoes and plenty of fresh herbs.
