The tomatoes are harvested in southeastern Sicily. They are dried slowly in the sun to preserve their natural flavour. Frantoi Cutrera preserves them in oil made from Nocellara olives which are native to the island.

Serve the sweet, juicy tomatoes as simply as possible to let their flavour shine. They have a meaty, slightly chewy texture. Pile them onto toasted bread with creamy mozzarella. You can add a drizzle of oil from the jar before serving.

Sun-dried tomatoes are a lovely addition to a grazing board. Serve them in ramekins with Italian cheese, cured meats and olives. You can press them into focaccia dough or add them to salads and sandwiches. They’re delicious in pasta salads, too.
