Donna Elvira produces bean-to-bar chocolate in Modica, Sicily. Founder Elvira Roccasalva is inspired by recipes written by pastry masters in Sicilian convents. The company sources prized cocoa varieties from Colombia, Peru, Mexico and Madagascar. The range includes single origin bars, PGI Modican chocolate, nougats and marmalades. Since these gorgeous bars are not over-refined and contain no added cocoa butter or lecithin, the cocoa butter from the beans may rise to the surface over time. This is not a flaw, but a sign of the chocolate’s purity and craftsmanship. It does not affect the flavour or quality in any way. As the chocolate is roughly ground, rest assured this texture is also expected.
