Description

Dallari 00 flour is a versatile white flour used to make fresh egg pasta and crisp, chewy pizza bases. Known as doppio zero in Italy, this finely milled flour is soft and pure white in colour because it doesn’t contain any wheat bran. When you bake with 00 flour, you will create doughs that have a smooth texture and good elasticity. It’s perfect for flatbreads, pastries, gnocchi and silky pasta sheets for lasagne and ravioli.

00 flour is the same as German type 405, French type 45 and American pastry flour, so it can be used in most recipes calling for those flours. In Italy, it is mixed with eggs to make pasta dough, with water for pizza crusts, and with water and yeast for breads like focaccia or ciabatta.
