The shell traps steam and distributes heat evenly. This is the secret to loaves with a crisp, golden crust and airy interior. Unlike a Dutch oven, there’s no need to preheat the shell. Simply place your dough on a flat baking surface and cover with the cloche.
When your bread is ready, the lightweight shell cools quickly. You can use it to cover loaves on your counter, keeping them fresh for longer.
The boule shell is ideal for round loaves. A batard shell is available for baking oval loaves.
