Gaia's vinegar of Santorini is a 5-year aged balsamic vinegar with a sweet and rich flavour and a unique aromatic note. Gaia takes recipe inspiration from some of the finest balsamic producers in Italy and France when creating their vinegar. When combined with their own Greek Assyrtiko grapes, their vinegar develops an exquisite and unique flavour. Assyrtiko are native to Santorini so production is limited and sought-after.
Assyrtiko grapes start life as white grapes - it is the time-honoured process that transforms them into a syrupy, rich vinegar. The Must from the grapes is separated into two halves upon harvest. The first half is aged in oxidised oaks casks, while the second is reduced down until it is thick and aromatic. When they are re-combined after 5 years, this unique and delicious product is created.
This vinegar is perfect for drizzling over caprese salad or making dressings and vinaigrettes. It works beautifully in marinades, or adds rich sweetness to sauces and stews.
