Clearspring organic hatcho miso, also known as mame miso or soybean miso, is the heavyweight of the miso world. Not only is it one of the most intensely savoury varieties of miso, but it’s also one of the most concentrated in terms of nutritional value.
Hatcho miso is packed with protein, fibre, essential amino acids, vitamins and minerals. These benefits are all thanks to the high whole soybean content of hatcho miso.
While other miso pastes are made with grains like rice and barley as well as soybeans, hatcho miso is made almost entirely from soybeans. The intense flavours come from the ageing process. Hatcho miso is aged for at least 3 years in cedarwood casks, the same way it’s been made in Japan for over 400 years.
This miso in unpasteurised, so the fermentation process is still active. ‘Live’ fermented foods like this are said to have a wealth of health benefits, particularly for the digestive system. To retain the benefits, try not to cook the miso for too long – add it as close to end of cooking as you can.
Clearspring organic hatcho miso is a great alternative to salt when seasoning dishes. Use a spoonful to add rich, umami flavours to soups, stews and marinades – the intense flavour is a particularly good match for red meats, aubergines and shiitake mushrooms. Or dilute 1 teaspoon in 240ml of just-boiled water to make the richest miso soup you’ve ever tasted – we doubt you’ll need to add anything else!
