Porcini, or cep, mushrooms are a versatile variety of mushroom with an umami-rich, nutty flavour.
Rehydrate a few dried porcini in warm water, and pop them in casseroles, tagliatelle or risottos. Or break up the dry mushrooms, and add them to a pan of rice while it's cooking to infuse it with umami flavours.
This 500g tub of porcini mushrooms is ideal for caterers. A smaller 25g pot of porcini is also available.
