Maple Syrup

Real maple syrup is made from the sap of maple trees. The sap is collected by inserting a metal spout into a hole drilled in the trunk of the tree. The sap is then boiled down until it reaches an appropriate concentration for syrup.

What makes good maple syrup? 

Colour and flavour are the two main factors that determine the grade of maple syrup. Grade A syrup is a light colour and has a delicate flavour. Grade B syrup is darker in colour with a stronger, more robust flavour. The darker the colour, the stronger the flavour. The different grades of maple syrup are determined by the tree’s sugar content.

Is there a difference between American and Canadian maple syrup?

There are both similarities and differences between American and Canadian maple syrup. One of the most notable differences is that American maple syrup has a sugar content of generally 1-2% while Canadian maple syrup can have up to 3%. Maple syrup also has a different taste depending on where it comes from, with some people preferring the taste of American as opposed to Canadian.
