Green lentils are a staple pulse, valued as a source of protein and used in cuisines around the world including Indian and Middle Eastern. They don’t require pre-soaking and can be cooked from scratch, classically boiled in water until tender.

Adding wine, stock or aromatics such as bay leaves, sprigs of thyme or garlic cloves to lentils as they cook are traditional ways of boosting their earthy flavour. Use green lentils in soups or purees. For a green lentil salad, cook them gently, checking often, so as to be sure to retain a little resistance in their texture, then dress them with good extra virgin olive oil, chopped fresh herbs and lemon juice or vinegar for a little lift. Alternatively, use green lentils to make moujadra, the simple, yet deeply satisfying Middle Eastern dish made from long grain rice, cooked lentils and crisp fried onion.
