Use shimousa soy sauce to add mellow depth to dipping sauces, or use on its own to experience the full flavours. Shimousa is an artisan soy sauce made from whole soybeans – many soy sauces are brewed using chopped and defatted beans – for a mellower flavour. The shimousa soy sauce is aged for around one year in cedar wood barrels. The result is a soy sauce that’s a deep red in colour with a flavour that’s best enjoyed with simple ingredients – boiled rice, sashimi or brushed over grilled scallops.
