Venison and goose liver pate is smooth with a rich creaminess from the goose liver and gamey notes from the venison. The port and spices add depth and a slight sweetness. Serve the venison and goose liver pate on toasted brioche or sourdough crispbread with a little peppery salad and a sweet preserve – try this onion marmalade with Pedro Ximenez sherry. This makes a great quick starter or indulgent snack.
