Caponata is delicious served cold as an antipasto, or warm through and use as a rich pasta sauce to bring a little Sicily into your home. Sicilian caponata is made from fried aubergines that are simmered in a tomato sauce with vinegar, sugar and lots of celery. There are many regional variations of caponata – this one is very traditional and includes peppers, capers and pine nuts. You can also serve the caponata in a big bowl with fresh bread for a main dish, as a side dish with chicken or fish, or even to top couscous or bulgur wheat.
