Saffron is a highly-prized spice, known as ‘vegetable gold’ as it takes around 150 crocuses to produce a single gram. Each purple crocus flower produces three stigmas, which are hand-picked, dried and lightly fermented. With this high-quality Iranian saffron, a little goes a long way meaning that a single pinch is enough to impart deep yellow colours and distinctively dusky, honey-hay flavours. 

Iranian saffron is typically used in Middle Eastern, Indian and Spanish cuisines to colour and flavour rice, soups, tagines, fish dishes, curries and cakes. Saffron can be used in a similar way to vanilla in custards and cakes, just remember to be sparing. For best results, very lightly crush the saffron strands and soak in a little warm water before adding to a dish – this will release the saffron’s essential oils for better flavour and fragrance.
