Rye grains or 'berries' can be used as an alternative to rice, or barley in soups and stews. Rye was first grown in south-east Asia, but has been domesticated in Europe since 1000BC. Today rye is most commonly eaten in breads in Scandinavia and eastern Europe, however the grain is a great addition to salads with acidic fruity dressings, or soups and stews. It can even be fermented to make rye whiskey, and rye beer.

Although not necessary, overnight soaking before cooking helps to soften the grain and reduce cooking time. Because of the structure of carbohydrates within rye grains they absorb far more water than other grains. Rye is a great source of both fibre and protein.
