This narrow, ribbon-shaped pasta gets its vibrant green colour from organic spinach. In Liguria in Northwest Italy, taglierini verdi is often served ‘alla Genovese’, with basil pesto, cooked potatoes and green beans.
This long, slender pasta tastes fantastic with a classic Bolognese sauce or ‘ragu bianco’ (white ragu), made with pork, white wine and fennel seeds. Any cream sauce or freshly made pesto will enhance its delicate flavour. You will wonder how you ever lived without it in your store cupboard!
