These celebration cakes are traditionally made on Good Friday and enjoyed on Easter Sunday. Traditionally shaped like a dove, they make a beautiful Easter centrepiece. 

The colomba is made using a slow-leavened sourdough method, with fresh eggs and Italian sugar. Plus the butter is made from cows who graze on open grasslands, enriching their milk with even more flavour.

Muzzi’s aniseed marzipan recipe proved a great success with the nobility at the time, and his business grew into breads and pastries.
