Bamboo is an important plant in Chinese culture. Traditionally, it represents the virtuous man who bends in the wind, but does not break. Bamboo shoots are thought to have been eaten in China for over a thousand years. They are also extensively in Japanese, Korean and South-East Asian cooking. Rinse canned sliced bamboo shoots and use them to add texture to dishes such as stir-fries, braised dishes and Thai curries.
