This fried tomato sauce is an authentic Spanish sofrite de tomate made in the El Bierzo province of Leon in northern Spain. It’s made with Spanish onions which are simmered low and slow with juicy tomatoes to create a rich, flavourful sauce.
This tomato sauce is a fantastic base for paella, soups, stews and pasta sauces. It has a comforting, home-cooked flavour that will make any dish taste like you’ve been slaving over it for hours. Use it to make speedy tray bake suppers or sauces for pan-fried fish or roasted chicken thighs. You can add smoked paprika, fresh herbs or chunks of fried chorizo to enhance its flavour.
