Chamomile seeds grow into strongly aromatic plants, with finely dissected leaves and daisy-like flowerheads with white rays and yellow florets.

Sow these chamomile seeds from a seed tray between March and July. Harvest them between June and September. Plant the chamomile seeds 10cm apart and to a depth of 0.5cm. The plant likes well-drained soils and partial shade.

The chamomile flower is known for its soothing effects and delicate, floral aroma.The fresh flowers can be used to make tea and bring wonderful herbal, honey notes to dishes. Use the fresh flowers to add a splash of colour to salads and cake decorations. The flavours work particularly well with fennel, blue cheese and honey vinegar. Or dry the flowers and mix with thyme and rosemary honey to rub over a cut of lamb before roasting.
