Skimmed milk powder is used in sausage making, bakery and liquid nitrogen ice cream recipes. It is a useful way of imparting rich flavours without overly-diluting mixtures, and can create light ice creams without compromising on taste.

Also use the skimmed milk to bind sausages, or for crispy loaves – Momofuku's David Chang calls it the 'MSG of Baking'. Even try using the powder in stock-making: sprinkle over chicken or fish bones before browning them in the oven, to create deep rich flavours.
