Agar agar is an algae which turns liquids into jellies – and is often used as a vegetarian alternative to gelatine. It is commonly features in South East Asian recipes, not just because agar agar is harvested nearby, but also because it is a useful ingredient in tropical countries. Agar agar strips set faster than gelatine and has a higher melting point, meaning that jellies don’t collapse on hot days.

To use, simply dissolve the agar agar strips in warm liquids. Do not boil. Try stirring the agar agar into a pan of warm cranberry juice for brightly-coloured jellies, or in a pan of coconut milk for jellies with authentic South East Asian flavours. Also use agar agar for savoury aspics, and in molecular dishes.
