Description

Vallée des Baux is a light and elegant oil with delicate, green olive notes and springtime, grassy aromas. It is blended from French olives which are grown in the South of France, and matured on the trees. They are then briefly fermented to help them lose any initial sharpness and to encourage round, mellow flavours.

Vallée des Baux literally translates as ‘land of the olive tree’, and is situated on a rocky outcrop in the Alpilles hills. The olives are grown by a co-operative of producers who press the oil in a 17th century mill in the heart of the town. 

The oil is used at Raymond Blanc's Le Manoir and the Heston Blumenthal's Fat Duck Restaurant in Bray. It is a natural partner for Mediterranean flavours, and should be used in the purest way possible – drizzled over grilled fish, with salads, cheeses and breads.
