Ibarra is a cinnamon-flavoured chocolate used to make traditional Mexican hot chocolate. The packet contains eight discs which can each be broken into eight segments.
To make authentic Mexican hot chocolate, add two segments to almost-boiling milk, and use a hand blender or traditional molinillo to create a frothy ‘champurradas’. Add a pinch of cayenne pepper for an authentic, Aztec twist.
The chocolate can also be used in mole sauces where drinking chocolate is specified.
