Bourbon vanilla is an intensely sweet, spicy variety with coffee, cocoa and hazelnut aromas. The big, glossy-black Madagascan pods are crammed with moist seeds, often scraped out and used to flavour custards, creams, ice creams or even fruit compotes. The full or empty pod can also be added whole to dishes to slowly infuse its exotic flavours.

Madagascan bourbon vanilla is widely-considered to be amongst the champagnes of all vanillas. These extra-long elegant vanilla pods are between 16-23cm, providing excellent value on a beautiful and high-quality ingredient, particularly when bought in a bumper pack of 10.
