Bergamot essential oil comes from the peel of Italian bergamot oranges. It is a quick and easy way to flavour dishes with enjoyably bitter, citrus notes. Take care when using culinary essential oils – one drop is the equivalent to one heaped tablespoon of bergamot orange zest.
Bergamot essence is famously used in Earl Grey, so try using the oil in afternoon tea accompaniments, such as madeleines, biscuits and sponges. Also use the orange aromas in Moroccan chicken marinades, or even a small drop to enhance the flavour of marmalades.
