This long, thick needle is a heavy-duty implement for tying up loose bits of meat before cooking to make it easier to move and carve. Thread the trussing needle with cooking string, and thread it carefully though the meat to secure it in place. Also use a trussing needle as Jane Grigson did to check if a cake is done in the middle.
