Dark Soy Sauce

Description

Dark soy sauce is a key ingredient of Chinese cooking, getting its rich, mellow flavour and deep colour from a lengthy soybean fermentation process. The aging of wheat, yeast and sugar results in distinctive salty, spicy, caramel, malt-flavours famous in red-braised dishes. Use dark soy sauce to add colour and depth of flavour to meat marinades, slow-cooked dishes such as Chairman Mao’s pork and dipping sauces.
