Description

Sosa Home Chef Gluconolactat is fundamental to spherification in molecular cooking. To achieve spherification in molecular cooking, you need to mix two salts, calcium gluconate and calcium lactate. This combination allows you to incorporate calcium into the liquid without adding any adverse flavour or odour.

Sosa Home Chef Gluconolactat helps to provide enough calcium to a liquid so that it reacts with Alginate and can spherify.

This not only allows you to create show-stopping canapes, but also helps in the creation of fruity centres which don’t leak into surrounding areas.
