This stainless steel knife is used to slice raw fish for sashimi and sushi. It is a yanagiba knife, which literally translates as ‘willow blade’. This describes the flexible nature of the 22cm-long, narrow blade which adheres to the Japanese tradition of only being sharp on one side. This right-sided bevel means the knife can only be used by right-handed chefs. The pointed tip identifies it as an Osaka-model, rather than a Tokyo knife, which has a blunt end. This steel-bladed sashimi knife is a key piece of equipment for Japanese chefs - particularly those with an interest in sushi and sashimi.
