Cloves come from the dried flowers of the clove tree - the buds are picked by hand when they start to turn red; they are then left to dry in the sun, being moved regularly to avoid fermentation, then sorted by hand.

With their strong outer layer, cloves can withstand the heat of infusions and cooking - add to mulled cider, venison stews and lamb bhuna curries.
