Use these organic aduki beans in stews and salads, or to fill Japanese dumplings and sweets. Also known as red beans, they have a sweet nutty flavour and can be used in both savoury and sweet recipes. They are traditionally used in the filing for sweet Chinese mooncakes.
Soak the beans in plenty of cold water for at least 8 hours or overnight. Drain and rinse, cover with fresh water and bring to the boil. Simmer until tender (around 40 minutes). Drain and season to taste, or add to your favourite recipe.
