Sosa Home Chef Xanthan Gum Clear is a xanthan gum which acts as an emulsifier, thickening agent and stabiliser in a range of foods.
Produced from fermented sugar, the end product is a gum which is soluble in both hot and cold water, and has a viscosity which doesn’t depend on temperature or pH level. It is stable in a range of acidic or salty environments. Its properties are best seen in ketchup which is gel like when squirted on chips, but very fluid when poured from a container.
When combined with other polysaccharides, it helps create gels – useful in dessert-making, and is a handy ingredient to make cold soups, foams and emulsions. Use in liquids with a water content higher than 80%.
