Konjac gum comes from the root of the konjac plant which grows in China, Korea, Taiwan and Japan. It’s perhaps the most viscous food gum in nature – ten times more so than cornstarch.
Konjac gum is water soluble and can be used as a thickener. It also acts as a stabiliser in ice cream and cheese, and prevent the development of ice crystals. It can also be used as a gelling agent and film former.
