Sosa Gelespessa is xanthan gum which acts as a stabilizer in a range of foods, but combined with an emulsifier like lecithin helps make foams.
Produced from fermented sugar, it creates a gum which is soluble in both hot and cold water, and has a viscosity which doesn’t depend on temperature or pH level. It is stable in a range of acidic or salty environments. Its properties are best seen in ketchup which is gel-like when squirted on chips, but very fluid when poured from a container.
When combined with other polysaccharides, it helps create gels – useful in dessert-making and is a handy ingredient to make cold soups, foams and emulsions.
