To use, dilute 100g concentrated nappage with 75g water or fruit juice – scale up the quantities as needed. Heat to 90°C then allow to cool to 35°C. Use a pastry brush to apply on the surface of tarts and pastries, or even dip whole fruits into the nappage for a glossy finish.
The nappage will also help to preserve the colour and freshness of fruits and baked goods for longer, so is ideal for using in bakeries when goods are on display.
