Tsuyu is the classic dipping sauce and soup base for Japanese noodles. Morita's somen tsuyu is a rich and rounded blend of umami-rich dried bonito fish and kelp seaweed, soy sauce, fermented rice alcohol and sugar. Serve the tsuyu soup base cold as a dipping sauce or dilute with water and serve hot or cold as a noodle soup, perfect with fine somen noodles.
When using the somen tsuyu as a dipping sauce, once all the noodles are finished, pour a little of the hot noodle cooking water into the concentrated sauce to dilute, and enjoy as a hot soup. The starch in the cooking water should thicken the broth slightly.
