Description

Shiitake soy sauce makes for a rich, umami sauce to drizzle over rice, noodles or grilled fish. The combination of salty soy sauce, dried bonito, sugar and meaty dried shiitake mushrooms gives real depth of flavour to this Japanese condiment. 

Mix this shiitake soy sauce with rice wine vinegar and brown sugar, then use it to glaze mushrooms. Serve the sticky, stir-fried mushrooms with rice and a sesame seed garnish. 

This artisanal soy sauce is produced by a cooperative of farmers in Kyushu Island, Japan. Founded in 1907, the cooperative has more than 4,000 members, and the key products created and cultivated are shiitake based.
