Spelt is a cross between emmer wheat and goat grass. It’s farmed right here in Britain, and has been for at least 4000 years. Spelt is truly an ancient grain, as its genetic structure has remained unchanged by human intervention in all that time.
Pearled spelt looks like a cross between oats and rice. It cooks just like rice, too. Once cooked, enjoy alongside your favourite curry or chilli con carne. Or use pearled spelt to make a risotto – it lends a distinctive nutty flavour to the finished dish, which is great with chicken, mushrooms and cheese.
Also use pearled spelt to make hearty and healthy salads. Toss with roasted vegetables, or heaps of chopped tomatoes and fresh herbs.
