His son René later revived one of the town’s traditional sweets: the calisson, also known as the ‘câlin provençal’, or Provençal cuddle. Melons for the calissons are harvested in Cavaillon and candied in Apt, a town renowned for its candied fruit, before joining finely ground almonds and candied orange peel.
