In 1920, artisan nougat maker Ernest Guillet founded the Nougaterie du Roy René in Aix-en-Provence to make his own recipes. His son René later revived one of the town’s traditional sweets: the calisson, also known as the ‘câlin provençal’, or Provençal cuddle.
