This trio of nut pastes is wonderful for home baking or patisserie. The bundle includes 3 x 200g tubs of roasted hazelnut paste, pistachio paste and blanched almond paste. Each paste is made with 100% pure nuts.
- Use the almond paste in frangipanes, whisked with egg whites and sugar. Add the almond paste to ice-creams, cake fillings or to the sponge itself. Enrich cookies with the almond paste and mix it with sugar to fill almond croissants. Almond paste is particularly useful for lining tarts to stop pastry from going soggy or for taking the edge off a lemon tart.
- Fold the hazelnut paste into French pastry cream to make an unctuous filling for choux pastry. One French pastry classic, the Paris Brest, uses hazelnut praline pastry cream to fill a choux pastry ring designed to look like a bicycle wheel.
- Use the pistachio paste in everything from an Italian pesto for stirring through pasta dishes, to homemade pistachio ice cream. Jacob Kenedy uses pistachio paste for his traditional pistachio gelato at Bocca di Lupo, but it can also be used to flavour macaron fillings, tortes, biscuits, and even baklava. Add a little sugar, and perhaps cream to make your own sweet spread to have on toast; or enjoy as a savoury treat topped with parmesan shavings or a little salt and Greek yoghurt.
Ingredients: Almond paste: 100% almonds, Hazelnut paste: 100% hazelnuts, Pistachio paste: 100% pistachios. The nuts are processed in a factory which handles all nuts including peanuts, so are not recommended for someone allergic to any nut type.
